for me, it's the granny smith
magnificently tart with just enough sweetness to take the edge off
they're complete ass if they get a little too old and lose crispness, but apples rarely stick around my house long enough for that to happen

Because lucy, cosmic crisp, pink lady, and sugarbee apples exist. Opals too. Fujis are fantastic when properly ripe, but simply too inconsistent compared to other varieties.

I've never had a great Fuji. Half the time they taste like celery and the other half they're a little sweeter but still bland as fuck. McIntoshes, Pink Ladies, Cosmic Crisps, and Opals are my Big 4.

the 'real' red delicious is long gone but there has been a project to 'recreate' it with a patent to prevent marketers from latching onto the term and fucking it's genes up again
it's called a sweetango or somethin'

I have tried these and i was expecting it to be good but i didnt care for it. I dont know if these were particularly bad examples of the variety but it was a very dense apple and not crisp. The flavor was very watered down and lacked complexity. I had really high hopes for it since i read about it.
