I don't know why but I've noticed that too. I honest to God think pasta tastes better when it's been sitting in the fridge overnight and then heated back up. Especially pasta with a meat sauce. Fucking delicious.

The sauce has had some time to set into the pasta, and the stuff on the surface oxidizes a bit - all in all, sitting cuts some of the acidity, and makes it seem a bit sweeter and richer.

I've actually come to quite dislike microwaved pasta, especially bolognese.

I keep the meat and pasta separate now. Reheat the pasta by boiling a kettle and pouring it over the sink in a colander. Heats it instantly like it was straight out of the pot and tastes a shit load better I think.

I love eating cold spaghetti because if it was made well when served hot, it should hold up reasonably well in flavor as a cold, deli type treat. Feel the same way about enjoying cold fried chicken.

You're so close to optimal. I make the pasta fresh every time since it doesn't take very long. Then ladle some cold sauce from the fridge and reheat it in the drained pot with the pasta still in there.
