I got inspired by the creampie thread so I am making a chocolate creampie.

I sort of loosely followed this recipe but I used a bit more cream and egg yolks and coffee than they called for.

I also, of course, added a smol pinch of msg.

And I don't really have enough bar chocolate so I bloomed cocoa powder in melted butter, and I also bloomed a little gelatin in the cream before whipping it so it will be a bit more shelf-stable sitting overnight and beyond.

I just have to make the pie crust and bake it.

I was also considering some sort of glazed nut topping - I have walnuts.

I'm also roasting a rather large whole chicken - I just put foil over it because it is taking FOREVER to come to temp. Interior was still at like 115F last time I checked. Got a frozen locally raised bird at a market in a smol mountain town.

Ok well um I made a chocolate pie dough. It is chilling now.

AP flour, butter, salt, msg, toasted sugar, cocoa powder, glycerol monostearate (moisture), sodium stearoyl lactylate (also for moisture)

and some local milk I picked up from a dairy (I also got a quart of black walnut ice cream, and 2 containers of fresh cheese curds maybe for poutine)

I'm going to blind bake the dough in an 11 in pie pan I have - and then chill it - and then add the chilled choccy mouse - and maybe top it with glazed walnuts, freeze-dried raspberry powder, or both

I finally got to use my 4 cup gravy separator! I saved the chicken drippings from the bottom of the pan I baked it in and then it has a lever to release a hole at the bottom and you transfer the juices into a container and throw out the fat layer.

I'm also making chicken stock with roasted chicken wings so I will make a real gravy with the drippings and some chicken stock as well.

I decided on a whim to make honey glazed walnuts - except I used half pecans, half walnuts cuz that's what I have. They smell fragrant. When they are done I will blind bake my pie shell.

So, these candied nuts will be added atop the crust base of my creampie. I don't want them to deflate the chocolate mousse. So crust, honeyed nuts, choccy mouse, then a dusting of raspberry powder on top to finish. I probably won't finish making it till tomorrow but I'll post a pic somewhere here if anyone is interested.

honey + melted butter + salt + msg +. (walnuts and pecans, roughly chopped) + a little cinnamon and vanilla extract

Graham cracker, vanilla custard poured over banana slices. I didn't do a side crust for some reason. Extra dick egg yolks because I had a lot to get rid of.

oh yeah I kinda remember this. You claimed you overcooked the crust - but really imho pie dough better a bit overcooked than undercooked - just gets it a bit crispy.

Anyways I set aside a pre-ferment for sub rolls for cheesesteaks I'm making soon. I'm boiling down the chicken stock I made, then I will store it. And I just took the chocolate crust out of the oven and will let it cool.

While you wait for my creampie - I breaded some eggplant fries. I seasoned them with salt, pepper, za'atar (middle eastern oregano, sumac, sesame herb and spice mix), lemon juice, a touch of maple syrup and msg

and then breaded them in a mix of white and buckwheat flours (sifted) to which I added a bit of milk so you would get bigger chunks on the breading.

They are going to top a pizza (dough is in the fridge) with cilantro/spinach pesto and a smol can of cherry tomatoes, and I also roasted red peppers and I have a roasted whole chicken to dice up and put on some of it (some meat, some veggie).

I think the glazed nuts can be used on both the choccy creampie AND to top the pizza.

Finished prepping dinner I think! Just have to assemble the creampie.

I made cilantro-spinach pecan pesto with a can of cherry tomatoes added.

I've got roasted orange bell pepper strips and eggplant fries to top the pizza - as well as diced chicken from a whole chicken I roaasted, and grated parmesan and (low-moisture, whole milk) mozzarella cheese.

They are tasty - I tried them.

So I cut the ends off the eggplant, peeled them, then tried to cut them into wide matchsticks - but really my lesson was it would have been a LOT easier to bread them if I made them a bit wider - so keep that in mind.

To get the "crumbed" effect on the breading - you mix in milk, buttermilk, or other liquid, a small amount, into the (seasoned) flour, a little at a time, then stir until it's a good mix of chunks and powder.

I like to add a generous amount of water to my beaten eggs - I find it helps the coating adhere better.

I added some za'atar seasoning to the fries, but I do recommend adding SOMETHING herby/spicy to the eggplant strips themselves - they would be a bit bland without it.

And make sure to FREEZE the breaded eggplant strips for 20-40min before frying so the breading stays on.

Be generous with the salt and I added a bit of lemon juice to the cut eggplant strips so they wouldn't be too rich.

I finished making the creampie! I dusted it with freeze-dried strawberry powder.

Pink on the outside, deep rich chocolate within, and a generous layer of glazed nuts buried deep.

I'll post a dissection later when I serve it if anyone is interested in getting a closer look at my creampie.
