So I've always wanted to try pic related but I could never make it until now cause

1- I didnt have the main ingredients aside from the spices cause they are hard to find where I live. I didnt have rice noodles and fish sauce and the butcher shop around doesnt sell bones.

2- It would use too much time and gas to make the broth the traditional way

I would satisfy my craving for beef noodle soup by replacing rice noodles, fish sauce and bone broth for spaghetti, soy sauce and beef stock (I would also not follow the traditional ratio of ingredients and would add a bigger amount of spices than the recipe asked for the amount of water). However, I've always read everyone talking about how delicious pic related is and how nothing compares to the traditional broth, so I ordered fish sauce and rice noodles from an online asian store and managed to get the bones so I could finally make pic related today. I didnt simmer the broth for 24hrs but for around 4 hours instead in a pressure cooker

My results:

1- The broth turned out much deeper, fat and beefy in flavor than my "artificial" previous one, however, that was not necessarily DELICIOUS let alone better than my previous one

2- Flat rice noodles suck and spaghetti is MUCH better

3- Soy sauce >>> fish sauce

I'm now tired and feeling misled by everyone including this board

Most ramen, even where it comes from, is based on chicken or pork. You might see a seafood topping, but the broth is usually chicken or pork.

Honestly, in my soup I use both fish sauce and soy sauce. If the flavor of the broth was too concentrated, you just have to dilute. There are multiple shapes of rice noodles, so try using a different shape.

Nothing wrong with what you did, sounds nice. But beef pho is wonderful stuff, and (should be) cheap at that. Gets served with a literal pile of Thai basil and other toppings as well. It's practically robbery the prices you have to pay for it in the USA. It's the equivalent of fast food in Vietnam.

There are no rice noodles where I live. I can only find them in asian stores and the only asian store in my whole state is 1:40 hours from my house by car. I went there still and guess what? They dont sell either flat rice noodles nor vermicelli, they only have angel hair and I dont like angel hair

My advice is to char onion and ginger before adding them to the broth to be strained out later. Deepens the flavor. The fish sauce might be more agreeable if you serve with some oyster sauce. Also, you poor soul, where do you live that you can’t get goddamn fish sauce and rice noodles?
