Why the fuck do Italians eat so little meat? Virtually every dish they make is grain with the occasional sprinkling of meat as a garnish. Little if any protein, just carbs on top of carbs with carbs on the side and carbs in the middle, slathered in some tomato sauce.

That can't be true by construction

Italian meal is divided at least in 2 part
"primo": pasta/rice and gerally cereal based
"secondo": proteins and vegetables

So everytime you eat in italy you eat one dish with pasta and a second dish without pasta, which means there are theoretically as much non-grain dishes as grain dishes

If you just staff your face with pasta it's a (you) problem

nono dude it's just a convetion because the pasta is usually eaten first (primo means first, if you wanted to translate "primary/of greates importance" you would say "principale" or "primario" ) and the meat after (second, secondo), nobody thinks one is less or more important than the other.
