I was skeptical until I tried it. It works unexpectedly well.

Burgers are supposed to have beef, vegetable, and bread flavors but the beef is supposed to be the strongest flavor. Ketchup is too sweet and overpowering for beef. Mayo is too creamy and sweet for beef. The cream flavor of cheese complements ground beef better anyways. Mustard is the only condiment of the three common ones that works well with the beef flavor with its bitter, sort of vinegar tang spice. Mustard also works better with the onion and pickle. Many breads used for burgers are already sweet as well. Adding ketchup or mayo makes the burger way too sweet.

Adding vegetables is just a carryover from time periods when people couldn't afford food without substituting vegetables in for meat.
