I don't really buy sauces though as I am growing chilis myself and do my own sauces. I made a great mango-apricot sauce last year that I will try to recreate. I'm pretty retarded and mostly grow superhots because the chinense varieties are so sturdy but my sauces turn out really hot. This year I want to grow more Cayenne and Jalapenos as I love the flavor of those. Habaneros give me the hickups for some reason (not because of heat, but because of their weird flavor, feels like my throat expands).
What I love to do is make some superhot beef jerky, keeps my family from snacking them away as well

The Hot Ones (Heatonist) sauces are really good as well. The Last Dab (Apollo) is not as hot and fits a curry perfectly imo, the classic garlic version was my go to breakfast sauce, and the Los Calientes was great with chicken. They are too watery for my taste though (except the last dab).

It's a finishing/topping sauce for things already seasoned. You're right, it's not really that spicy or flavorful on its own (anymore that is, quality has dropped since 2010). It's like ketchup in this regard, a final, optional compliment.

So, take something like fried chicken. You have the flour/batter seasoned, you have the capscaicin mixed into the frying oil, sriracha is your dipping sauce before you eat.
Or, stirfry. You have the meat marinated beforehand, you have it cooked all up, then sriracha as a compliment at the finish.

Just getting into sauces and started off with the 3x teco and then received a bottle of Mexico Lindo Habanero which I found fruity and currently finishing a bottle of Melinda's Ghost Pepper which I dislike the smell of.

I guess I got into this seeking something like the salsas served at taco restaurants but I dislike the smell of vinegar which most sauces contain as a preservative. For that reason I'll doctor sauces to my preference by mixing very small amounts of baking soda into them, taking care not to overload on the saltiness (which might be countered with brown sugar) and then add some cumin to it, and even a drop or so of liquid smoke if it feels too basic and unembellished.

The next two I'm interested in trying out are the Yellowbird Habanero and the Grace brand.

honestly, i am not a fan of a lot of hot sauces, because a lot of the time they are basically buffalo sauce, far too much vinegar.
one of the better ones, for flavor anyways i have found was the chipotle tobasco, doesn't go on everything, but i have found it does go fantastically with spaghetti or pizza.

same anon here, late reply but its because it has that very specific flavor which is peppery and also the artificial feel to it. Honestly tho, i forgot that i put valentina in rotisserie chicken which is good, also do it to kfc on the rare occasion i have it but normal chicken meals i wouldn't use it, for meats i really cant think of anything it would go well. Tho i will admit, i don't eat many seafood since I'm not from the coastal states but i forgot its almos traditional to add valentina to seafood dishes specially if they contain shrimp or oyster, also octopus. So yeah seafood, some chicken and snacks.

The one i posted goes well with literally everything; eggs, sandwiches/tortas, chicken, haven't had it with fish but it would work no doubt, meats specially, maybe not vegetarian dishes but its tasty enough to not be egregious. Its versatile when you just don't feel like making salsa/sauce, and as i said pretty tasty its also not overly hot but still has heat. Doesn't hold a candle to the salsas my abuela makes me, both in spiciness and flavor, that's the main reason why i really can't understand bottled hot sauce fascination over just making your own but I'm clearly biased and also cause its definitely not as easy to find the variety of chiles i can in other countries.

Tabasco is great on eggs specifically because it's so acidic. On other dishes I either use habanero sauce for the heat, or sriracha if it's a dish that includes rice(I find that sriracha goes great with rice). I don't think you need more than those 3 since they already cover basically every use case - vinegary, hot, and something in between.
