Remember reading a story written by someone who worked at a Panera Bread or something. The short of it was customers rarely were interested in genuinely new menu items, so they ended up being a waste of money for the business. By contrast, menu items comprised of ingredients used in other dishes but just rearranged slightly differently tended to make a much bigger splash. Meaning, the profit margins of just folding a pizza in half and calling it something else are much higher than if they added new toppings
