I've been trying to cut down on the amount of sugar I'm eating lately and I made pickled onion today without any sugar.
Just vinegar, water and some black peppercorns.
Onions are already kinda sweet and it was really well to my smoked brisket.
I hope my fellow home cooks see this tip and try it with other vegetables.
I think the reason it works is because onions are already a little naturally sweet and also because the usecase for the pickled onion is usually for the sourness and crunchyness and onion flavor.

There's a cubano place that makes pickled onions with just spices and lime juice. I've been using them in bean salads, but I went a step further and replaced some of the spices with a bouillon cube cause I saw some Mexicans doing that with salsas.
