your pan was too hot for your first batch of bacon and crisped some of the fatty drippins in the pan. you should make griddlecakes or toast next time to clean up that grease and you can use a new sheen of oil for the eggs that won't have as much to clean up. griddlecakes will clean your pan and dry it at the same time.

I find if there's zero grease in the pan, the first few strips take forever to cook, so I give it a little prime. Panfrying the toast sounds like a grease-sponge to me, at least for the sheer quantities of grease I'm playing with. I'd definitely try it with my inital butter layer next time.
