I want to move to a small town and start a high quality sweet shop… except instead of selling homemade candies and such I sell homemade potato chips. I could make all different kinds of chips, and sell special varieties, and have containers where people could take a bit of each of their choosing, I also could sell other brands of chips (albeit they have to be organic and have no artificial stuff), pretzels, nuts, variety of cheeses, and platters and such people could buy for parties.

I think it would be a great and popular shop? Why does no one open one of these? You think it would do well?

OP, you want to start small with this sort of thing. Set up a stall at a farmer's market or flea market and build up a buyer base before you do something like a store. I support your dream OP, I too have had a dream for a semi unique restaurant. Sadly mine will probably always stay a dream but if you really feel passionate about it and you have some talent and are willing to suffer failure I think you could make it happen. Artisan craft foods are very popular these days. I'm not sure about a storefront, maybe something more like a food cart or food stall. If you could setup somewhere downtown with a cart, get the scent of the chips wafting in the air to passing workers and you could hand them a piping hot fresh baggie of chips with interesting flavors I think you could make something of it. You also either need to purchase the real estate or rent it.
Given the initial investment cost and the production cost, what sort of profit margin do you expect to have? And with that profit margin, how many items would you need to sell per week on average for the business to even break even? And in a "small town", what percentage of the population do you expect will ever buy anything from your store? How many of them will become regular customers? And will enough regulars come back, often enough, to keep your business afloat? This is all before you even start talking about making a profit. We're talking bare minimum here.
