first time I went to popeyes in years and I ordered the flounder sammich and they were out. you'd think the fish at a chicken joint would be the safest bet since nobody orders it. imo the chicken sammich was better at BK and the sides were meh, but the sauces were awesome and its impossible for them to fuck up the biscuits.

Probably means it's the ground beef of fish. Fish meat, minced and reformed into a square patty before being breaded and fried. Good way to cut down on waste while making a consistent product. They shouldn't be using organ meats or bones if it's not listed in their ingredients, so it's unlikely that they just toss whole fish into the grinder... though I hear fish bone meal is supposed to be a pretty good source of calcium.

McDonalds mostly panders to southern and midwest states in the US which are landlocked. These states generally don't have access to fresh fish and only get it frozen. There is a stigma among a lot of the population that fish is not good because they have only experienced the frozen version. Fish doesn't sell well there. A chef once told me "If there's a food you don't like its because someone hasn't cooked it properly for you."
