Lived in a lot of states. I'll stick with where I lived longest, but only from my own opinion and experiences.
Born and raised in WA. Salmon with dill and lemon & wild rice. One of my go to comfort foods.
Spent more time in Cali than I care to admit. Aside from what everyone can assume, thet have a nice blend of a bit of everything. The best I can describe is the concept of the great american melting pot.
New Mexico to Texas. Don't need to explain.
Florida. They have some nice fish, but I was absolutely sold on fried aligator. So long as you trim ALL the fat from the lizard, it's delicious. The fat tastes really foul.
South Carolina. Mustard & vinegar based bbq, slaw, and creamy spicy sauces, usually mayo based. Really good, I cant recommend carolinian bbq enough. Their chili is pretty decent too. The Wendy's here have Carolina classics, which is just a standard burger with slaw, onions and chili. Coleslaw and bbq go hand in hand here.

We eat plenty of meat. We love the stuff and generally try cook/use every part of something.
Boerewors is a mixed bag. If you buy your general grocery store stuff youre usually getting substandard quality which you'll notice if you chew thoroughly (there will be hard bits in it that feel like bone when you bite down, this is commercialized stores being cost-cutting fucks).
Youre generally better off making friends with and buying from a butcher because the stuff is magical when made right.
Whenever possible cook it over an open flame grill (we call it a braai), casing should also always be sheep or pig intestine (sheep is better) and kudu is the best meat to use though coarse ground beef is acceptable.

QRD you only want young saplings and you only want the roots, this next part is important You have to use it fresh as possible because a toxin starts to build up as they dry and bad for liver and kidneys (which it is no longer used in root beer) well that and also it's the precursor to MDA (not MDMA but very close)
