The signs I'm referring to are those related to meningitis - which is inflammation of the meninges (around the brain) and spinal cord.

You would probably have a high temperature and flu-like symptoms accompanying this (nausea, vomiting, etc)

Also, the 'neck stiffness' that we're talking about is related to 'nuchal rigidity' - basically, tissues in your spinal cord are inflamed and tighten up so it hurts to flex your neck forward.

Legit I’ve known dudes that took frozen burritos to work on a construction site and left them in their car all day on the dashboard to warm up for lunch. Only time I’ve ever gotten deathly sick from food poisoning was from a bad mussel in a New England seafood boil. Don’t fuck around with food safety when it comes to holding temps and especially not with seafood. I’ve eaten slightly undercooked chicken and medium rare pork all the time, raw fish and even blue (raw) beef and never had an issue. Never once gotten sick from things I’ve cooked, but again I don’t push the limits on expiratory dates or holding temps.

Like I said it depends on what it is. Low moisture foods like pizza with cured meat toppings are probably fine. Rice is a no go. Anything that can hold an internal temperature in the real danger zone 80-120 degrees longer like soups or stews certain pastas, mashed potatoes, mayo based salads / dressings don’t fuck with. Chicken don’t fuck with. And it really depends on what bacteria gets trapped in there before you leave it out. That’s why I always smell things. You could trap bacteria in milk that will spoil it much better quicker than the expiration date. I go as far as to refrigerate my fruits and vegetables most of the time. And you should really freeze meat within a day or two of bringing it home if you’re not going to use it immediately. If you follow these guidelines you can be a lot more lax in your preparation and handling. If you try to make a medium rare burger out of slimy old oxidized brown ground beef you got on managers special you might get sick. But bright red properly temperature controlled ground beef I’m sure you could eat raw and likely never get sick.. even in an industrial setting where the beef was pre ground.

This is the best way to get good fried rice where the rice grains are separate from each other (as much as possible) and have a nice tender chew to them. Imo the secret is to only do that if you know temps in the room don't get above mid 60's F, your rice isn't especially moist beforehand, and your rice cooker is generally clean. I always give my 24 hour old rice a very thorough smell test. Or just be prudent and put your damn rice in the fridge. The old cooked rice for fried rice trick still works the same when stored in the fridge.

Some bacteria leaves poison in the food once it has formed and no amount of cooking will make it safe. You can’t cook a corpse that was rotting for 10 days in the sun and expect it to be fine. That’s why you should never put hot soups in the refrigerator even if you intend to reheat it to 180 degrees. I’ll make this real simple. Bacteria needs 3 things to fester. Moisture, access to outside air with bacteria in it, and a temperature conducive to bacterial growth. Crackers without a butter content in a 0 humidity environment will not breed bacteria even left in the open for years because they contain no moisture, unless they absorb moisture from the air and will therefore never spoil. Canned goods, powdered goods, jarred goods, pickled shit, basically anything shelf stable takes a fucking long time to spoil *until* it’s exposed to outside air and contaminants because they’re vacuum sealed at the factory. Milk is boiled at extremely high temperature to kill bacteria and then vacuum sealed. Depending on the types of bacteria / yeast / cultures introduced to it as well as how long you leave it sitting out at a temperature above 38 degrees is how quickly it will spoil. It’s not some exact science, it’s common sense you have to learn. And there are certain foods that can breed certain bacteria or fungi that are more deadly than other foods, like molds or botulism. There’s also bacteria and mold that are perfectly fine and healthy to consume. That’s why it’s better to err on the side of caution when it comes to food safety and not leave cooked food at room temperature overnight.

The thing about rice is it’s extremely high moisture and cools very quickly so it gets to and stays in the danger zone much longer than other foods. I always put cooked food into the sink with cold water, it cools much, much faster and doesnt linger in the 30-50c zone where bacteria activity is highest.
Then it goes into room temp faster so I can put in the fridge and wont heat up the fridge like it would if you just put warm food there.
