My job is having a queso dip competition in a couple days. They've been very annoying about this, so I've decided to create a culinary tribute to René Magritte. I'm going to make some (very very yellow) french vanilla pudding mix and present it as queso. However, if I just make the pudding, it would no doubt look like a very boring queso. What sorts of things could I add to my pudding that would make it look like queso without being blatantly disgusting? I was thinking of a mint garnish and maybe diced strawberries as faux tomatoes.

Use the great value kind vanilla pudding. More yellow. Add a hint of velveeta and maybe some diced tomato & pepper (usually same aisle as velveeta)

I was thinking of it along the lines of Magritte's appropriation and subversion of everyday images. My pudding, I hope, will share every retinal quality of queso, but wholesale acceptance of the image without any greater analysis will result only in treachery.

That's still not like Magritte. Magritte painted surrealist work as well as incongruous scenes, such as a girl wearing fine lace just munching on a fucking bird, feathers and all.
Your pudding is neither surreal nor incongruous in the same manner as his work. It's nothing more than a practical joke. I'd be fine with that if that's all you presented it as but you needlessly and wrongly and inexplicably compared a fucking pudding to Magritte.

Don't listen to this dork, OP. You may piss some people off, which is a win, and chances are some people will be delighted, which is also a win. Either way, it's better than doing a halfway decent regular queso that no one will notice.
