They're good but only on dryer kinds of eggs, like American omelettes. On looser stuff like a french omelettes ketchup kind of ruins it, but American omlettes and the like have their time and place and ketchup, I think, goes really good with them.

Hes retarded and doesnt know how to properly make eggs so he just listed a bunch of random shit hes seen on eggs. Oregano is ok to use if italian sausage is going to be included otherwise the only seasoning eggs need is salt and pepper. Cayenne is also acceptable if you want some spiciness but you should use cheese for flavor. Dont add seasoning until the eggs are fully cooked salt will ruin the egg structure. Get a nonstick and dont scramble the eggs, just crack them in a bowl remove any eggshell and pour them into the nonstick over medium heat. Add some butter and use a silicone/rubber spatula to continuously scrape the bottom of the pan clean. Do this until there is no visible liquid left, the eggs will naturally scramble using this method. Then add cheese and remove from heat, add salt and pepper and cayenne or hot sauce if you so choose. This is the correct way to make eggs and anyone who tells you otherwise is fucking dumb.

OP just go nuts. Eggs are cheap as fuck and nearly impossible to screw up. Use different techniques, spices, temperatures, pans and so on. It is basically the most fun dish for experimenting.

honestly Italian food doesn't use that many seasonings. Basil is the most common I've seen. oregano is used too. I don't really know any Italian dishes that use rosemary. Rosmary seems more like a spice I'd use in a roast chicken or a fried steak. which don't seem all that Italian.

for me it's either a handful of spices from the rack + butter(lots of added fats and sodium), or just a quick no fuss scramble and ketchup. I use a low sugar, low sodium ketchup, and I don't drown the eggs in ketchup so its very minimal added sugar.

Besides, ketchup is the west's #1 source of umami and is delicious. Its a shame if you don't take advantage of it because you have some weird hang ups about eating ketchup making you look like a child

its ok but you probably grow out of the sweetness along the way. maybe try some spring onions and spices you find fitting. i like to put chopped cherry tomatoes in mine sometimes. diced ham is also good but tends to overshadow the taste of the eggs.
