I don't find it incredibly chewy, especially when compared to well-done steak. I do prefer it sliced up, though, hence my cutting up of it shown in the photo. I usually cut it in half once more after that, as well.

I just cooked and ate that steak for dinner. It was incredibly tender; very delicious. It was sirloin, and the fat obviously didn't render incredibly well and was pretty tough, but it was only on the edges. I've had several relatives and classmates insist I will get parasites or food-poisoning from eating steak this way, but thus far have had no issues whatsoever. Picrel was the sirloin before cooking. Do you cut the fat off when cooking it blue rare, or keep it on and eat it?

Blue rare is pretty great, it's how I prefer my steaks. I'm constantly left disappointed when I go out to eat and get told the staff won't serve blue rare meat. This just tells me they most likely have poor quality steaks.

I've never actually eaten blue rare steak that I haven't cooked myself. Actually, I've never eaten any steak that I haven't cooked myself... It's always so expensive at restaurants. Whilst it can be fairly expensive to buy it from my local butcher, it is never that expensive, and I feel more confident as I know more about where it has come from. It's a shame that they won't serve it, and often-times when they agree to, from what I am aware, it is not as rare as one may like. Hesitancy. I recommend just cooking your own steak. Eating steak out seems to be a rip-off most of the time.

You're the retard. Fat and connective tissues render at rare and medium rare temperatures. They just need more time, which is why reverse searing in the oven or sous vide is so nice. You can hold your steak at a rare temp for a couple of hours and then finish with a very hot sear and get everything you just mentioned.
