Are tomatoes in season now? I was asked to make bruschetta tonight and I don’t want watery ass grocery store tomatoes with no flavor. Would canned be a better idea?

get Kumatos if they're available in your area. expensive but a very good product nonetheless. salt and crack pepper on them generously. taste them before assembling. if you've over salted you can always mix in some more tomatoes but watch your budget.

Balsamic reduction and fresh basil compliment tomatoes natural acidity.

I dunno what country you're in, but where I am in the US there's always good tomatoes available. It's year-round greenhouse shit from Canada usually.

I ended up just using roma tomatoes. It helped to skin them, remove the goop in the inside, and squeeze out the water.

Tomatoes are a particularly egregious example in the US. Pretty much anything you find in a store is chemically ripened and engineered to survive the truck ride. Absolutely not for taste. Only other thing I can think of thats worse in the US are mangoes.
