Sear a few links of Italian sausage in a hot pan until they are browned but still a bit pink in the center. Remove the sausages and saute sliced onions and peppers until they soften and get some color. Add a crushed garlic clove and saute for a few more seconds and then deglaze the pan with 1/4 cup of marsala wine. Let the wine reduce a bit and then add 1 cup of good tomato sauce. Add the sausages back in (whole or sliced, your choice) and allow to cook for 5 or 10 minutes or until the sausages are fully cooked. Salt and pepper to taste and eat it as it is, or serve it on a split toasted bun with melted mozzarella.
