You want something that feels like a cohesive meal, not just one or two items. Pasta makes this easy because it's already cohesive. Same goes for pizza. The good thing about a homemade pizza is you can make it together. If she's just sitting there watching you cook it might be a little awkward for one or both parties.
If you want a pasta dish I'd go with something lighter than meatballs. Chicken breast, tagliatelle, roasted red pepper sauce. Or chicken marsala if you like mushrooms and want to gamble that she does too. That's what I made for my wife the first time she came over for dinner back when we were dating. Could go with pesto if you have a mortar and pestle or food processor. Also slightly risky due to some people's sensitivity to garlic, but it's dead simple to make. Pesto, sliced chicken breast, pasta, extra grating of parmesan on top.
But salmon and baked potato is a good choice too if you're good at making salmon. I'd recommend a third component, some kind of veggie. Could just throw together a salad. Mixed greens, grated carrot, sliced kalamata olives, some kind of vinaigrette. Or something simple like green beans or asparagus would go well with salmon.

tonight I made some pasta by browning some meat and mushrooms and frying in a roux with butter and adding some milk to make a cream sauce, then I tossed it with seasoning and fettuccini
I think if you added some veggies like steamed broccoli or asparagus on the plate it'd make a nice meal

the salmon idea sounds good, make sure to slice your potatoes into thin rounds and bake them in a seasoned oil w/ fresh rosemary n thyme towards the end. crispy potatoes provide a v nice counter to a nice bit of fish. also add a vegetable, in bongland purple sprouting brocolli is v good rn, but generally whatever green is in season for you. if you want to step it up a notch a little white wine pan sauce goes a long way with these sorta meals.
