It's impossible to get trichinosis from farm raised pigs these days in a first world country. Pretty much all present day cases can be traced to meat from wild animals, and it's been that way for decades.

Looking at stats from Germany, close to half a billion pigs were inspected between 2000 and 2009, and Trichinella were found in 4 (yes four) of them. That's less than a 1 in 100 million pigs.

It's not. The blood replaces eggs in this dish, too. As it bakes, the blood coagulates just as eggs would and the cake sets.

Honestly? As an Euro living in the US, I actually really rather like chicken and waffles. There's a resto near my office's old location that made it and it tasted quite nice. Spicy honey-fried chicken, thick proper waffles (not the thin American bullshit waffles) and a little maple syrup or honey syrup on the side. Was good. The only problem I had with it was what to have as a side. Vegetables with waffles seems wrong some how as does fruit with fried chicken so I never got sides with it.

Besides the world-famous sopa de macaco, there's sarapatel. It's pig or goat offal (usually heart, lungs and kidney) cooked in blood. Never had it so no idea if it's uma delícia or not. In the south there's also roasted pig head (uma delícia).
