Soup /ck/.
My roommate and I are home alone for a month. Neither of us cook a whole lot but we have pic related.
What are some tasty, not too complicated recipes for food that can be stored for at least a few days at a time? I'm thinking rice and beans and some meat from costco but I don't really know where to go from there.
Any recs fellow co/ck/ monglers?

I'd recommend just learning how to use the stove. IP is good for specialty stuff like cooking dry beans, making chicken stock, yogurt. But it's not a daily workhorse to me. The only "normal" cooking it does is faster braising and even that is questionable when you include time to reach and leave pressure.

If you don't know how to cook, start with roasting stuff in the oven or pan frying, both are a lot easier and with roasting you can make it so there's almost nothing to clean after. With the IP it's a pain to deal with the aftermath.

Almost anything goes in a stew. But note that some ingredients do not require much cooking, some will benefit from longer cooking, some will fall apart if they cook too long. Also sautee some of the stuff first. A good stew should contain:
-Some kind of meat
-Onions and spices
-Some kind of vegetables
-Some kind of filler carbs (unless you want to spend a lot of money on getting your carbs from vegetables, which is not a bad idea of course.)
For the last point, consider lentils, potatoes, maize, noodles. Remember what I said about ingredients falling apart, you will have to test that.
>Fried stuff
This one is a dry recipe. Fry potatoes or something like that. (It can do that with sauteeing, right?) Goes well with vegetables, meats, onions, eggs, cheese if its introduced after frying. Experiment a bit.

One main ingredient missing here is rice. You can try introducing them in stew, but it's tricky. Better keep it extra. Fried rice works, but you'll need to cook it first, then fry the rest of the stuff, then the rice.

Btw my preferences (with normal cooking, not the instant pot - but I think it would suit it very well):
-Fried hash and onions, top up with lentils, curry seasoning, and a bit of peas
-Classic goulash (with either hash or real goulash meat), onions, bell and chili peppers, a bit of red wine. Can add some carrots. Eat with extra rice.
-Fried potatoes with bacon and onions. Not a full meal, needs some kind of vegetable and protein extra - fried eggs and vegetables for example.

instant pots are more work than you think. yes, in theory it's easy to set it and forget it, but you still have just as much prep work and cleaning required as regular cooking with the difference being it takes hours longer for your food to be done as if you'd just made simple meal using the stove. the only thing instant pots are useful for is cooking down roast cuts of meat into soft stews. aside from that, they're a meme
