Roaster edition. This thread is for all coffee related discussion and inquiries.

How about for this thread we either post our favorite local roaster OR Google and post roasters near you, you would want to try. You can also post your favorite online roaster you like or would want to try. If its sold in the grocery store it doesn't count.

Cheap manual grinder? I grind mostly store-bought medium- and dark-roast beans, and I want to start using something with burrs again. I had a baratza encore a few years back that crapped out after 2 years because I used to use it to grind enough for a few days at a time.

The to roasters I want to try are lineage coffee and Orlando coffe roasters.

Lineage is hardcore 3rd wave fruit roast. They have a decent subscription service so I'll probably try it during the summer in my french press.
https://www.lineageroasting.com/products/roasters-choice-single-origin
Orlando coffee roasters has a lot more diverse offerings. The main one I want to try is the Cuban esspresso that uses specialty robusta. Hard to find that in the states.

oh sorry i jumped to this thread and missed your comment.
um pretty much as simple as it gets i think. im pretty new so just a regular 6 shot moka pot and im trying different grounds to see what i like so i got a brazilian ethiopian blend which i really liked but i ran out so now i have to use my colombian which im not a huge fan of, i pretty much use that method that hoffmeme did a few videos on. while the coffee is poured in my mug i start on the milk which i add a tiny bit of sugar to and then microwave until warm and then use one of those cheap hand spiny milk frothers and do that till its like half way to meringue consistency and then back in the microwave to heat up a bit more and then use the frother again to get rid of any last large bubbles and then i pour it into the coffee. i then slightly fold the foam into the coffee a couple times and then go sit down and eat breakfast which atm is jam toast.

i let my coffee sit to cool down because i dont like really hot coffee, i think it kinda ruins the taste, also dont want to burn my tongue which means i wont taste anything at all. if you like your coffee hotter you can start the milk process as soon as the coffee starts rising in the moka pot.

i also think this method works better for naturally sweeter light roasts. i have also tried this method with a mocha and i liked the results. you could probably add cinnamon/nutmeg/holiday spices to the milk foam for a holiday themed version.

For any Europeans in the Benelux area, Blommers is a pretty damned amazing micro-roastery. I don't think I've ever ordered beans from them that managed to disappoint me.
https://www.blommers.coffee/en/

This might just be my nostalgia talking since I used to live nearby and just walk to their small roastery to chat about coffee in a hangar-turned-young-entrepreneur mall. Ever since I've been a huge supporter of those local microroasters that embrace seasonality and rotate their selection based on whatever new interesting beans they found.

>> No.17382288

>>17382268
It depends. There is only so much you can do when the beans are already processed and roasted. Technically by wacky processing methods or manipulating roast levels you can bring out different characteristics of the coffee (or in cases of higher roasts, just make them very strong and bitter).
Might be the beans. I've had some which were very pleasant but just had hints of walnuts and vague caramel/vanilla, about what you'd expect. On the other end of the spectrum, you can get beans which once properly extracted will genuinely taste of tropical notes, naturally integrated into the coffee.

oh yeh then thats not what i mean, i could taste the full flavor profile, like when you have a really good audio setup and you can close your eyes and point out every instrument. yeh it wasnt amazing but i didnt have sour or bitter messing with my taste resolution and covering up the flavors.

I'm coming from one naturally processed light roast to another and admittedly this is from another roaster but they couldn't be more different. The one I've been dailying is sweet and full of flavor with an almost a strawberry note to it (has been very hard to dial in) but todays was very muted with not much in the way of sweetness and a buttery toffee aftertaste. I'll grind finer and try to pour the first two pours more aggressively. And just a sidenote but coffee is so much fun, I feel so bad for people who're missing out.

>> No.17382351

>>17382337
They have less variation since the roast overtakes more of the other tastes of the coffee bean, but I know people who like the roast-y flavors themselves. I like medium roasts more since I'm looking for that sweetness and fresh flavors, but not everyone necessarily looks specifically for those. If someone tried genuinely good medium roasts and darker roasts and can simply say that they prefer the overall roast-imposed notes, then that's purely a matter of personal preference.

Yep. So are most of the harios so I've been working through some packs of cafecs. I like the mediums and the origamis. Lights choke abit for me but I think thats the kinu's fault. Generates a bit more fines than something less aggressive and slower cutting, but thats why its great for espresso. The point of the light is to trap fines and slow the flow anyway. Medium is apparently the fastest flowing, and the origami is completely different to either of those so it might actually be the cafec whites I linked earlier.

>> No.17387993

>>17387965
yes. if you brew a good cup. not sour or bitter at all and you can just taste the coffee (make sure its as fresh as possible) then you can 100% taste the notes listed. its obviously not going to taste like drinking strawberry and apricot juice in black tea but you can taste the notes. people can taste different notes, like if it says what that picture says one person might taste generic berry and generic fruit and generic tea smells/flavor notes and another person will taste the exact flavors listed.

like the coffee i drink lists juicy berries, apricot, creamy caramel and hazelnut.
and when i make a really good cup i can taste a hint of like mixed berries, i can taste as if i licked the outside of a dried apricot, i can taste caramel if i had small bits still stuck in my teeth from eating it earlier in the day, i can taste a variety of nuts in the back of my throat after i swallow.

After the caffeine is done inhibiting the adenosine receoptors all the adenosine that's kept in the extracellular space is going to activate adenosine receptors, thus make you feel even more asleep.

I buy 2-4 250g packs of different beans from a local roaster or two at a time. Sometimes i order, say, 2 specialty + 2 average stuff like Huehuetenango. Drinking via v60, french press and phin. Sometimes 2-3 cups, but some days i simply don't want any coffee. Those 750-1000g of coffee can last me from 2 weeks to a month. Occasionally, i can grab a cuppa in the city. I just enjoy the process of preparing something not-espresso based at home.

A long while back I went to a local 3rd wave coffee bar. You can pick their house blend or whatever single origin they are currently offering. I picked one that was more different: notes of fig, molasses, and tobacco; had it as a pour-over. I think the guy messed up the pour-over but it still tasted good. How do I find more coffees with this profile? It wasn't overly burnt or smokey. More a spider rich wood but baked buy darker fruity fig flavors and dark sugar sweetness.

You won't want that. Every robusta blend coffee I've had that's more a "medium" was harsh and not appetizing. They only one I liked was this Italian Lavazza high roasted coffee in the orange brick. Granted high grade robusta might be different, but I still have my doubts.

If you don't have a moka pot, yeah, it's a pretty ok espresso like strong cup. No crema really, though you can get a metal filter and you'll end up with something to drink that scratches some of the same itches. Aeropress shots are great for making lattes and stuff though. Unless I had spent thousands for a real at-home setup (which I don't get the impression you did), aeropress is a clena and easy way to make a good cup.

So I actually grabbed a bag of this since the roaster is local. I can definitely taste a stark difference compared to my previous coffee beans described as "milk chocolate, raisin, floral".
Whether I can taste the notes of strawberry and apricot, I'm not so sure. Might have to adjust my brew method a little to tease out the taste and feel.

How are you brewing it? Not this one but there’s an Ethiopian bean I get at my local shop that I miss the apricot notes when I use a pour over but in my French press or aeropress (the latter using a metal filter) there are definite and fantastic apricot and cocoa notes. I think some of the oils and solids the flavor depends on are lost with a paper filter. It’s too expensive for everyday but I’ve gone through two pounds since early January.

They've got about the thickest, bleached paper tasting filters you can buy and noone makes an alternative. You have to rinse the absolute fuck out of them to get rid of the taste which fucks your kettle situation already. Thick filters will absolutely affect the taste/body due to keeping more oils from the cup, which you may or may not like. Also the filters will suck down into the spout and choke itself off if you don't have like a barspoon or chopstick handy. Just get a size 3 v60 and toss it on a big mug.

Why do grains sometimes sink and sometimes not when I make my cold brew? I try to aim for pretty much the same coarse ground every time, but sometimes I find it all sunk after 16+ hours while other times it stays on top. What's up?

Also, does it matter?

As far as I can tell the coffee comes out darker and more bitter if the grounds sink, but I'm not 100% of it, just seems like it. I'd have to compare them side by side to be sure.

No I don't, should I? I've heard conflicting opinions(like with fucking anything...), some say stir regularly, some say don't stir at all, some say stir only at the beginning. I'm learning towards the stir at the beginning side, but not sure.

I do stir sometimes and it usually causes most to sink. One of these days I need to get a second french press and just make two batches at the same time to compare.

i eyeball the grounds, usually about 2.5 cups per gallon of water. 48 hours for caff, 72 for decaf since idk about you nerds but i don't think anyone near me sells decaf whole beans so i am stuck with trash grounds.

Its nice. I have a boss that put me into decent coffee, light roast and taking care to brew. I am not a huge coffee snob but its a deffinate improvement over a blade spice/coffee grinder. And now, I have my spice grinder back so that's nice.

Tldr that blade grinder is randomly popping beans around and theres no consistency to it whatsoever. If theres no consistency to particle size, you're not going to evenly extract the coffee. Small particles will be bitter and overextracted, large particles will be sour and underextracted.
>>17396240
