i live on the coast so i can get mussels and oysters super cheap they're great and feel kind of fancy when you eat them
i also love a good boomer tier pot roast and vegetables or any cheap cut of braised beef
good instant ramen with vegetables is also nice and cheap but maybe less healthy
popcorn is also a pretty nice cheap nutritious snack i eat it often

i forget exactly but i can tell from the countertop it's from when i was living in a motel so it would have been pretty simple
brown some cheap stew beef, coarsely chopped mirepoix and mushrooms. deglaze with chicken stock, simmer, serve

hello OP i would like to answer your question so i will say a few of my cheap mainstays
-beans and rice (cook black or red beans in tomato sauce, broth, beer and spices for a long time, possibly in a crock pot then mix with rice. my method is: chop up onions/garlic/chilis, add heavy amounts of spices to sauteed onions mix, then add meat for example chorizo or hamburger or stew meat or pork sausage, then add it to the beans)

popcorn

chicken thighs roast/baked with taters, garlic, carrots, shrooms, i typically just throw them on a sheet pan, douse with olive oil soy sauce/coconut aminos, apple cider vinegar/pickle juice and spices. serve over rice

a nice chicken curry- get some coconut milk, ginger, the protein of your choice and whatever veg you like. i made a nice chickpea curry the other day

lentils are cheap healthy and delicious. a nice lentil soup is hard to beat

a tomato sauce- i'll typically cook onions, lots of garlic, shrooms and italian sausage and then add tomato sauce, simmer the meat/veg with some balsamic and/or cheap red wine before adding crushed tomatoes

soup of all kinds and varieties is cheap and delicious, for example i made some chicken soup with thighs the other day

also OP if you are broke or times are tight, don't forget to go to food banks. they throw away food every day so don't feel guilty about going to get some meat and veg. typically they will give you a box of stuff worth about $100 and you can go once a month, in a mid-size city of 100k ish there are probably at least 3-5 food banks so you can hit one every week. also the dry/canned goods can be saved for the inevitable economic/supply chain collapse

A bag of unpeeled onions in the oven at 175° for 20min, then easily peeled by simply by squeezing the onion meat out.
Delicious, even more so with a bit of butter.

Beans on toast is good. Two/three slices of well buttered bread, baked beans on top. I also add chipotle chilli flakes and dry coriander (think yanks call it cilantro?) to the beans before microwaving them. Have on its own for breakfast/lunch, add two fried eggs on top for a dinner.

Literally 5 mins to make, packed full of protein too especially with the eggs and if you use wholewheat bread. If having without eggs I also like to drizzle olive oil on top but it really has to be very good quality oil with that fruity olive taste, so not really budget-friendly. Also the best way to arrange is to slice the bread in half and put around the outside of the plate with the beans in the middle, otherwise it gets soggy.
