dice potato, heavy oil your pan and preheat oven to 375-400.

After 2-3 min of onion cooking, add beef 2 tsp paprika, salt pepper and sage. Break up and cook for 7-10min mid heat. Dont want to fully cook it

For the sauce.
3 eggs
3 even tablespoons of white flour
6 tbsp oil
350-500ml milk . I am using 350 as my dish is small.
1st break the 3 eggs in a bowl.Gently mix them we dont want to get air in.

Heat the oil in a sauce pan. Low MED .heat

Gradually Mix flour to oil whisk fast. Add milk.Increase heat and wait for it to boil. Make sure its mixed nice.
