I have never liked cheesy fries. Don't know why. If it's cheese and chili that's great, but just throwing cheese on stuff is something I have never been a fan of.

The cheaper brands will just use a mix of refined dairy ingredients like whey protein, milk solids, etc. but the more expensive brands will use real cheese in the mix.

Like that's the ingredient list for Boar's Head brand American cheese and it says they use a mix of "Minnesota barrel-aged cheddars" when making it. Pretty much the same as "real" cheese except for the sodium phosphates which is probably what gives it that creamy texture when melted.

It got so bad that in my country the government forced all brands to indicate when Cheese is not actually cheese on their packs. That immediately threw a wrench in a lot of trusted brands revealing lots of not-cheese cheesy products.
