Any ideas for meals that you can make a lot of, store, and enjoy cold? For my job I drive and pretty much have to just stop my vehicle and eat. Cant drive home and cant wait for a restaurant to prepare shit. And dont want to eat terrible gas station food either.

PB&J or cold cut sandwiches, can store veggies/condiments in separate container
Salads with chicken or fish, with vinagrette in separate tupperware so the greens don't wilt

There is no really good method. And in the summer it sucks even more.
I kind of gave up on actual meals and just got things like nuts or chopped vegetables and occasionally sandwiches.
I'd focus on snack portions instead of actual meals, When you do a lot of driving for work breaks aren't the same as they are at normal jobs, I don't know how it is for you but I don't get them since driving from address to address counts as a break in my state.

I'd say most dishes still work cold, obviously sandwiches, but also pasta, grilled meat, roasted vegetables/potatoes. Cold is only really bad when you need fat to be liquid in the dish (like clam chowder), or rice. rice never works cold alone
