make sure to use 'fruit wine' yeast or champagne yeast to boost the overall alcohol tolerance. i usually get up to 8% with a cup or so of extra sugar in with the juice. if you want to add more, make sure to leave it to ferment longer than 3 weeks to really get the most out of it.

No sugar added is about 5-6% depending on how much sugar is in the juice to begin with.
Most bread yeasts can go up to 12% if you want, which for normal apple juice evens out to a full pound of sugar ontop of the sugar that's already in there.

Id leave more space at the top, take a half/quarter cup of juice out ot that shits gonna jizz all over your shit

Bread yeast works fine but add a couple raisins or some frozen fruit to give the breast yeast more food when it gets tired (it will and slow down)
Cold crash that shit in the fridge for a couole days till all the yeast is at the bottom after its done bubbling and fermenting. This will prevent the shits.
