....I really don't have confidence in any of my dishes. Weird because I've cooked for a lot of people but 99 percent of what I do is pan fry + 2 sides

I don't know if there's a single dish in particular, but what I think I'm better than most at is improv.

I rarely use recipes and just kind of throw things together. It makes it difficult to repeat dishes, but given an open canvas I can do pretty great.

We were at an air bnb for a birthday party and had limited equipment and a small grocery store near by. I was able to throw together a smokey coq au vin and gumbo for like a cajun themed dinner. It was kind of insane how good it was, multiple people at the party kept telling me it was ridiculous, so that felt really good.

Attached is an impromptu indian dish that I made one day when I was craving indian and had no restaurants around. Flour tortillas are pretty good as roti.

Here's a pic of a mexican grill thing I did. People literally just brought meats and shit from costco to an air bnb to have for dinner one night, for future reference it's a pretty dope and easy way to celebrate someone's birthday with a group of friends.

Once we were there no one could really decide on what to cook because they didn't have all their normal utensils and spices, I figured we could make a mexican style mixed grill. They even had metal skewers at that bnb which was pretty clutch. pic related

Thanks man, it's been super long since I've been able to cook because I travel a lot for work and my kitchen got rekt and had to be torn apart and redone. It was super old to begin with and there ended up being issues with the plumbing and electrical behind the wall.

It's been 4 months since I've been able to cook in my own kitchen. Super brutal and didn't realize how much I'd miss it. Should be back in action early Feb, until then I'll be shitpostin on ck instead of working

Pasta, all kinds of pasta without meat. Girls get wet over my pasta, could even use their sauce for sauce plus only parsley.

Cacio e pepe pasta. It took me a while to get the recipe right but I can do it really efficiently now. Just need good Pecorino Romano to make it properly.
