Use higher heat & make sure the oil is hot enough. Put a single piece of onion in the pan, if it doesn’t immediately start sizzling your oil is not hot enough.
Make sure to frequently stir to keep it from catching

OP I think I have a decent answer for this one. They want to make their recipes seem like they take less time than they actually do because modern people like "quick weeknight meals" and shaving time off of onion browning time is a good way to do it. They can't say, cut the baking time of a casserole or it's gonna be bad, but stuff like this and prep time for vegetables can be fudged reasonably
