Haven't posted here for a few months. Made a Thai curry for lunch today.
Red onion, chillis, garlic, ginger, lemon grass and shrimp paste.

Saute your whatever these are called with a good grind of pepper. I'm using mixed peppercorns (black, white, red, green). Add the shrimp paste before the pork mince goes in.

Pork mince goes in bit by bit. Season with more pepper, bit of salt and some chilli flakes.

Bring to a simmer and let that do its thing for a certain amount of time.
Then in with some fish sauce, and lemon juice. Then simmer for another specified amount of time and taste. I added more fish sauce and lemon. It was missing something so I added 1 - 2 teaspoons of brown sugar (in place of palm sugar).

Vermicelli in your plate bowl, spoon over your sloppa, garnish with some chopped peanuts and basil (didn't have Thai basil). I love fish sauce so used it to season my meal.
