"Fresh" olives off the tree are pretty much inedible due to how bitter they are, that's why they're always brined to remove some of the bitterness.

Basic canned black olives are typically underripe green olives that have been processed to change the color though. And it seems like they soak them in water or brine so many times that they just end up losing a lot of flavor. Kalamata olives are really good though if you want something other than a green olive.
