This should be more of a thing, a variety of cuts each cooked properly for the amount of fat and connective tissue. Throw in some carpaccio or tartare too, maybe something slow cooked, let me experience the spectrum of cow in a single meal.

It would be a pain, but I would buy it. Different cuts of beef and necessary cooking techniques have such different flavors that would be interesting to taste side by side. It should really focus on the natural flavors and textures and not seasonings. There's a wide range of beefy meat flavors in a steer that could be teased out for a nice taste journey.
