Idk if this is true. I had a dust up with my local pizza hut a year or two ago. Got a pan pizza where the crust wasn't all risen and crispy like i'm used to. Wen't to pick up my replacement and was similiarly disappointed. The manager explained that the dough needs to proof for 24hrs so as the night goes on the dough you're getting is less and less proofed. So it's best to order your pizza as early as possible to get the best pan crust. I am pissed they charge extra for pan now when that was their default since day 1.
