Anything wrong with buying crushed tomatoes instead of whole for making tomato sauce?

>> No.17299780

This is what my off-the-boat Italian grandmother used for years so I'd say your in the clear anon.

>2 cans crushed
>1 can sauce
>1 can water
>fresh basil
>onions
>garlic
>1 red bell pepper
>Sauté diced onion and bell pepper in olive oil,
>add butter and sauté garlic
>add remaining ingredients
>let simmer for 1 hour
>taste test, if too acidic add 1 tsp sugar
>EAT

the only way to get better tomatoes is to grow them yourself
Farmer's market tomatoes sometimes better, but only if you live close to where the farm is

nothing wrong really, but whole tomatoes will taste more tomato-ey in the long run

I’ve heard that they use thickening and clotting agents in the crushed tomato cans for consistency. It’s pretty easy to mush the whole canned tomatoes with a spatula.

>butter in tomato sauce
she must have been from Val d'Aosta, I recommend against it
>cans used as units of measurement
I'm sure she fit right in with you Americans though
>1tsp sugar
that's a hell of a lot, start with much less than that
>simmer for 1h
you can do much less than that, just cook it thoroughly and reduce it to taste
also try splashing some white wine over the onion and pepper sauté

Hand crushing tomatoes is just so satisfying though.
Why would you deny yourself the experience?
