you know how breakfast burritos have all these creative egg and other stuff combinations? those werent invented for burritos, theres plenty of ways mexicans mix up scrambled eggs, and i used to live off them:

>lightly fry corn tortilla strips in the pan before adding the whisked egg
>ahogados/drowned: drown the eggs as they start to cook in the pan with thick red or green salsa, let the salsa bubble a bit in the pan before removing
>"mexican" style: lightly fry diced tomatoes (roma is the typical, less watery choice), diced onions, and diced peppers (serranos taste better than sweet jalapen'os, and definitely fresh, not pickled) in the pan before adding the whisked egg
>mix with black beans, or refried beans (pinto or black), add cotija at the end if refried
>scramble with soyrizo, which tastes less greasy than regular chorizo

i also like breakfast pizza where you just put a fried egg on top of reheated leftover pizza

the proper way to make huevos rancheros is to fry the egg on top of the frying corn tortilla so they become one, then serve with salsa on top and refried beans on the side. delicious.
pic related is how my dad used to make them for us when i was a kid, and comes out like a breakfast cake almost. basically you fry a flour tortilla separately, degrease it with paper towels on a plate, then spread refried beans on top of it. then you top it with the fried eggs, salsa, shredded cheese, sour cream, and avocado.

Just crack it in, mix it up, and if you're squeamish about it being fully cooked, microwave it for like 30 sec.

Make a turkish dish called menemen. Very tasty and easy to make. It's onion some sort of green pepper, parsley and pureed tomato. I purée tomato on my box grater then cook it down in a skillet with butter. Traditionally they'd use olive oil but I like the taste of butter better, maybe add a splash of olive oil. After the tomato has been reduced add the chopped onion and peppers and sweat. After the veg is slightly cooked add your eggs and parsley and constantly stir until your desired firmness. And don't forget seasoning with salt and pepper, add whenever I don't care. I sometimes also use one hot pepper if i want a little kick. Kenji lopez has a decent video on his channel with the recipe but i can't stand that guy.

my fav breakfast egg atm is scrambled with spinach and indian spices on toast:
