Boiling potatoes is the best way to make good french fries. You boil them until almost ready to fall apart and shake in a mesh strainer, spread out and let exterior dry (on a wire rack in the fridge is great, fridge is dry), then fry. Your rough, dry potatoes should brown nicely in hot oil.
