If you cook it slowly for a few hours it can actually break down and blend into the sauce. I do that with onions for beans and it does taste good, although you don't have to be that meticulous about it, just thinly slicing with a knife works fine. It's not going to liquefy in oil that quickly just because it was sliced thin though, you still need time for the fiber to break down. I think that scene was more about the idea of what prison was like for those people rather than real cooking advice.
