It's how I grew up eating chicken, chicken on the bone is preferred over boneless skinless chicken and it's done before cooking most of the time, ofc when you're cooking a chicken whole you chop it up after cooking
When I started cooking I just used skinless boneless chicken thigh and chicken wings but I tried to do the whole cleaving thing and every time I'm left with mouthfuls of bone shards cause I'm terrible at aiming the cleaver
My mother and grandmother don't know how to explain the technique to me and whenever I ask people online they just assume I'm talking about deboning chicken annoyingly

For Chinese people to post on Youtube, which is banned in China, they need to have permission, so I assume all Wang Gang related channels are all heavily monitored, controlled and supported by the Chinese government. They are essentially propaganda tools to try and form and cultivate a certain image China wants to have of itself in the rest of the world.

That being said, QuiErWa has done all kinds of different things with her channel (vlogs, shopping, cooking etc), it seems like she (or whoever produces her channel) are still looking to find a good format for her.

To his (social) credit, he didn't hide it. He had an episode where he went around the old office, where the editing team used to be huddled in a tiny room. He also showed the awards he received from different gov't cultural organizations.

I made a thread about this once but couldn't get a straight answer. It's something I've always wondered too. And the Chinese eat everything with the bones, not just chicken. Eel, fish, bamboo rat, beef, you name it. They just hack the entire animal into bite size pieces and cook it like that, and then the eater has to eat everything like a cherry or unpitted olive and spit the bone shards onto the table. I love Sichuan cooking but it's so annoying to eat, I wish they would just give me a boneless spicy fish

It's approved and supported by the government but I honestly don't think that's really that bad. It's not like it's a politics channel after all, how much could they really be changing? I want to watch videos about authentic Chinese cooking by a skilled chef and that's what he gives me. I just see it as coincidental that the Chinese government also wants me to want to watch that. The Japanese government subsidizes and promotes the anime and Japanese cultural exports overseas and nobody complains about that.

Anecdotally, I know that Wang Gang got in trouble with the government by his bamboo rat videos because that was right after covid and they were sensitive about showing Chinese eating weird wetmarket animals. They also got mad when he ate an endangered giant salamander. But he apparently has a lot of creative control because all 5 bamboo rat videos and the giant salamander are still up.

Ironically, they can't show the butchering scenes because YouTube doesn't allow it. The only censorship in his videos comes from California, not China.

Yeah, it's all fine, I just think it's good to be aware of that. At the same time, yeah Thailand and Japan also support and subsidize certain channels to boost their industries, but there is a difference between supporting certain channels and controlling the only channels that are permitted, right?

The censorship is a youtube thing, they're a private company with their own conditions, he was certainly not censored by California or the USA. But if Wang Gang wanted to upload a video deemed unsuitable for the authorities controlling his channel, he would certainly get censored, even though that's unrealistic, since he has a cooking channel after all.

That being said, I enjoy his videos and have learned from him, so there, great content from China. It would be great if the Chinese people could upload videos in any way and wherever and how they see fit, but yeah
