Vegetarian here. Veganism is generally insufficient for nutrient needs even if done well, but most people aren't able to do that properly. They'll say that "veganism is cheap because rice and beans are so cheap!!!", but in actuality in order to stay even somewhat close to healthy you have to buy a bunch of supplements and that racks up the bill. Most vegans have diets made up almost entirely of carbs, or the "healthy" ones that eat only vegetables and waste away. Even then, a lot plant-based sources of necessary vitamins like A and Calcium aren't readily bioavailable and is near impossible for your body to process and turn into useful nutrients. Eggs and dairy, if done in moderation alongside plant protein like beans or tofu, vegetable (and something like a multivitamin and maybe D3), should be enough to keep you healthy and not wasting away like a lot of vegans. Figure out your nutritional needs and how to not die before considering ethics of food consumption

I don't disagree with your general argument that being healthy takes precedence over ethics, and I also agree that there are certainly examples of unhealthy vegans who have high visibility because of social media cancer. That being said, you can absolute get vitamin A in adequate amounts from squash vegetables and carrots; plant milks are fortified with calcium (just as cow's milk is) or better yet you can find it in leafy greens and broccoli, which will have better absorption. The diet you are describing is certainly well thought-out and healthy, as can be an entirely vegan diet. Then again, that should be a prerequisite for a diet regardless of ethics.
