It will still taste fine, but like other people said, the issue is acidity, or lack of it.
Red cabbage is beautiful and delicious when made right. You can slice it thin and add it to a salad for esthetics or you can pickle it.
Pickled red cabbage is a big thing in German/Scandi cuisine. Very often used to accompany fatty foods like roasted duck or porkbelly. Or sausages like picrel.

The whispy shit that's giving the photo a Soap Opera vibe? That's steam. Steam - especially from a large simmering pot - when photographed from above, requires a glass/plexi shield, a good coating of rain-x on the lens, and/or a decent amount of dicking around in photoshop.

Either way, the pot's barely at a simmer and is full of blue water because OP's simmering cabbage in alkaline/hard tap water.
