The die that the pasta was extruded from. Cheap pastas are extruded through teflon dies, which is a fast and cheap production method. Extruding through a bronze die is slower and therefore more expensive. Bronze cut pastas generally have rougher exteriors which leads to more starchy cooking water and better pasta texture
