So-called "Southern barbecue" is basically just slathering meat in overpowering sauce and destroying its original flavour.

A lot of cooking sites will essentially even admit this by saying you can fix shitty cuts by marinating them in sauce or, more telling, drenching them afterwards.

This all came from Southern BBQ. Yet we insist yanks have cuisine.

That's the point, that poor people who could only afford cheap cuts would cook them in a tasty way to make them palatable.

It's also why spicy food is popular in poor parts of the world like Mexico. It comes from a time when the only meat people had were cheap, old cuts, and you'd use a ton of spice to mask the flavor.

Meats are best when using few seasonings, unless the meat itself is low quality and sucks
