Most of the time things named this way are very distinct variations on a specific dish or type of cuisine. In some cases they're completely different things that shouldn't even be categorized together.

Barbeque is a perfect example, the regional variations usually include things like the type of sauces used and the specific meat or cuts they're known for (think Carolina pulled pork vs Texas brisket). Carolina barbeque uses a lot of vinegar and mustard for their flavors, whereas other regions may lean into tomato based sauces that get cooked into the meat to form a glaze.

NY style pizza is pizza while Chicago style is an aborted lasagna, etc.
