I eat vegetarian meals every now and then, I love meat but no one needs to eat it for absolutely every meal, eggs, rice, beans, and vegetables and mushrooms are enough for a good, quick, not too filling meal. I made veggie gyoza tonight, filled with mushroom, cabbage, scrambled egg bits, minced pickled onions, and minced ginger and garlic, very fucking tasty, and I didn't feel as bad about eating twenty as I do if I eat twenty of my usual mince pork gyoza.

This thread is making me craze a bean and cheese chimichanga. It's making me want to make bean and cheese hot dish; instead of ground beef and cream of mushroom, you dump cans of refried beans in a casserole dish with some shredded Mexican blend cheese, diced onion, black olives, and a layer of tater tots on top. Superb, best Mexican food you can find in Minnesota is in my house.

Just buy canned pinto beans and mash them yourself, spice them up a bit on the stovetop and call it a day. When they're already refried it takes a lot of the moisture and flavor out. You can soak your own beans too but nobody has the fucking time for that, most families will just buy some pinto beans in a pinch.

I prefer meat and cheese over bean and cheese. To me, beans are just cheap filler to bulk up foods. And if I go beans and cheese, it has to be whole beans not refried or smushed up beans. I'm pretty choosy about refried beans as the cheap stuff has a terrible texture.

The reason your beans suck is because the canned beans you buy suck. Add some bacon grease or a large pat of butter, then water until they are at the consistency you prefer. 1 tsp of oregano. 1/2 tsp of cumin. Your beans will no longer suck.

Salt
Garlic
Chiltepin
Knorr Chicken Stock

I like caramelizing the onions and peppers in lard as well. And, of course, even more lard if you're making refried beans.

I've used milk before and it worked very well. I like traditional refried beans which is made with lard. Since I don't make my own and buy the canned stuff I learned to use a little extra fat and then thin the beans out with a liquid.

Also picrel for the rice is how it's done.

Used to when I was kid. I'd still eat em now I guess, but a situation where that makes sense rarely comes up. My favorite are beef Fajitas with beef, onions, peppers, cheese, refried beans, and semi crushed up chips.
