Thinking about experimenting with homemade tendies. I have these plus flour and cornstarch and the usual herbs and spices. I will be shallow frying. Anybody have any ideas?

Where is the cornstarch? And consider double frying (basically frying to half done, with a rest so the heat fully disperses in the meat instead of just on the outside, followed by cooking to crispy doneness).

Try using pulverized saltine or Ritz crackers.

That's the way my grandmother breaded chicken for frying, and it's excellent.
