I usually start a sofrito then work my way into something from there. I started mincing a little green bell pepper recently which worked out way better than I expected. I'm going to try to mince down a little carrot next to see if I can emulate the flavor for marinaras that use a soaking carrot but for other sauces.

I always use my aglio e olio base.

>7 cloves of garlic sliced or chopped
>1 tsp crushed red pepper
>1 tsp crushed peppercorns

Simmer for around 3 minutes.

Of course, manga manga fren. Once you nail a few sofritos you can add just about any tomato product you want and make a great sauce. Here's my momma Angelini's fast sauce:

>1/2 cup of EVOO
>7 cloves of garlic sliced or chopped
>1 tsp crushed red pepper
>1 tsp crushed peppercorns
>1 tbsp sweet basil
>1 tbsp oregano
>1 tsp marjoram
>1 can stewed tomatoes

Simmer garlic and pepper until golden. In goes the rest. Season and stir, bring to boil, reduce to a low simmer for 20 minutes. Wala.

Optionally drop in a pat of butter about halfway. Sup the tomatoes for almost any tomato product. If you want you can use fresh tomatoes or even jarred sauce. But use half the jar and let the EVOO do the rest.

After adding a few extra spices and some italian sausage to this it is unironically better than any homemade sauce you can come up with. If you're using canned tomatoes and canned tomato paste in your sauce, there is no reason not to use this.

Zero chance jarred sauce will come close to another sauce made with fresh measured ingredients made to your liking. If you haven't found this out you should keep working on your dish. It is a good hack though I do it all the time too.

Marinaras often will have a carrot as an ingredient to balance the flavor. It reduces the acidity and provides a little sugar.

Usually I'm partial to a nice marinara, but lately I've been easting a lot of cacio e pepe variants. A couple nights ago I made one with caramelized onions, roasted grape tomatoes, fresh basil, and a balsamic reduction. The onions were caramelized in bacon fat. I will be making this again.
