I've eaten raw ground beef many times when I'm flavoring stuff like meatballs et. al in order to gauge how well it's spiced. Raw beef by itself has basically no flavor. You're tasting nothing but the raw onion and molasses bread.

I live in a corn field and there is a butcher here that processes the cows that he raised himself. His raw hamburger is still flavorless. Maybe he's using the same chlorinated, synthetic meat thing that Walmart is using but I doubt it.

Looks pretty good to me, like a purer, simpler version of pic related. And, honestly, by the time people have added the capers and the pickles and the worcestershire and the ketchup and the hot sauce and the this and the that, tartare is often way overseasoned so I can't say I'm mad at the less is more approach displayed here.

I like them on sourdough, maybe with mustard and garlic.
I almost never get them because it's the one food where the quality of the meat shines through, and holy fuck unless you're getting a steak from the butcher or having them ground it up at the moment, most beef is either flavorless or has notes of (so far harmless) growth on it.
And yes I've actually tried to use USA grocery standard ground beef like this because I didn't care about potential food poisoning. It just didn't taste good.
