Calls for very little tomato and no carrots, calls for a chili powder, has none of the aromatics that are in bolognese (so no basil, no parsley, etc) and instead you head towards cloves, cinnamon, chocolate and nutmeg, and the whole thing is serve with Oyster crackers. If you wanna say "this is just X", don't point to bolognese but to saltsa kima which instead matches Cincinnati Chili's description much more closely and points towards the origins of it as a Macedonian/Greek dish.

Cincinnati Chili is an acquired taste. For me, it began with pre-packaged microwaveable Skyline dinners. They were crappy but I was a basement-dwelling subhuman at the time, and they were cheap and available. Then I took the shredded cheese on top pill. Then, a few years later my fridge died during winter while family was visiting. It was a chaotic time and we were storing our remaining food in coolers outside. In a moment of divine inspiration, I made Cincinnati Chili, without having ever made it before. I doubted myself, and figured I must have gone insane, but when I smelled it, I knew I'd gotten the spice mix just right. It was just like what you'd get at Skyline. Everyone enjoyed it, and from that point on I've respected it for what it is. End the hate.
