My friend who works in food service ordering food for a restaurant and I went over this, I think we managed to get the cost down to about $.55 a sandwich, which only leaves a profit of $.45 per sandwich. It's not feasible. I think we figured out that making a nicer sandwich for about $2.00 and selling it for $5.00 was a much better idea, since the time it took to cook was the exact same as the cheap sandwich and people were more likely to come back to the more expensive sandwich over time.

I used to dream of doing something like this. Basically a single item menu with a vegan variation and maybe two choices of side and a few minor options on toppings/garnish/condiments mainly built around bougie, but economical drinks. Like chili and/or loaded nachos and/or dressed baked potatoes and/or garlic and sundried tomato sourdough at $5 a plate and $2 old fashioneds with a range of low end whisky or $3 ones with a selection of premium ones. Throw in some 'craft' soda and a dessert collaboration (friday through sunday only) and I'm about done. Thing is ... this is basically the food truck model with a higher operating cost and it only works with volume and when you work out the volume required you realise you are basically creating the job from hell just to break even. Like you'd have to seat a hundred people an hour. It does not make sense to cap your dollar spend per person, if anything you should be seeking to maximise it because the fixed cost per person remains the same whether ordering three courses plus a drink costs $15 or $150.
